VEG FRIED MOMOS/DUMPLINGS

This is a traditional dish of Tibet,Sikkim etc.It is being served in a steamed or in a fried form with variety of fillings. The fillings can be made with chicken,fish,veggies etc. Here i  have used the veggies filling INGREDIENTS FOR THE DOUGH Maida                                      1cup Salt                                          a pinch Baking powder                        a pinch Water                                        for mixing Mix in all the ingredients and make a thick dough and keep it aside for about 4-5hrs. INGREDIENTS Cauliflower florets                                            2cups Maida                                                              3tbspn Rice flour                                                         1teaspn Egg                                                                  1no Chilli powder                                                    1teaspn Turmeric powder                                               a pinch Pepper powder                                                 1/2teaspn Salt                                                                   1teaspn Water                                                               as required Make a thick batter with all ingredients together (except cauliflower). Wash the cauliflower well, boil them in water so that it becomes more tender. Drop in each cauliflower florets in the batter and deep fry them in oil and use immediately.

MINT COOLER

Mint being very good for the stomach in fact good for digestion. People dont have much option with mint.They may also hesitate to have it quite often. So here is something....:  a mint drink which can be done very easily with less amount of ingredients and which are daily available back home. I came across this dish from one of the restaurants in bangalore.I first hesitated how its gonna be,but once i had it i couldnt stop having it.The chicken pieces inside was adding an extra taste for it. GOLI BAJE( a mangalorian recipe)

INGREDIENTS   Maida                                   1cup Besan                                   1teaspn Baking powder                     1/2teaspn Ginger                                  1/2teaspn Green chillies                         1-2nos Curry leaves                          1teaspn Asafoitida                              a pinch Salt                                       1/2teaspn Water                                    for mixing   Mix in all the ingredients together in a bowl to a not so thick and not so loose consistency and keep it aside for about 1hour. Heat oil in a pan Drop in  the mix into the hot oil by making small balls and deep fry them,untill it turns golden brown in colour and becomes crispy also. Serve this hot with some mint chutney.

BREAD PIZZA

Pizzas are always kids personal favourite.Now a variety of pizzas are available in the market and we generally depend on them on our hangouts.I came across the bread pizza through one of the blogs,i found it very interesting and made it the very same day as breads where already available at home.The first time when i made it it became a bit hard due to over heating,but the next time i made it was just perfect and all of us enjoyed having the pizza:) I had used brown bread for this recipe as i wanted it to  be more healthier.Here i have used the veggies, but you can alter it according to your personnel choices. BREAD TOAST

DARK GRAPE SQUASH

Squashes are something which we always store at home .Basically we do depend on all these store bought squashes ,but why dont we make them back home itself.This idea brought me into making squashes. My personal favourite is the grape squash so i opted to make it first.Now let us go through how it is being made.     Contents:   Red grapes            1/2kg Sugar                     3/4kg Water                     2cups Citric acid               1/2teaspn method: Wash the grapes well. Heat 1cup of water in a deep bottomed vessel, add in the  grapes to it and allow it to boil, once it starts boiling crush the grapes well untill it becomes juicy. Now with the help of a strainer extract the juices from the pulp and keep it aside. In another bowl boil 1/2cup of water and add in sugar and allow it to dissolve, add in citric acid and mix untill it turns to a thick syrup form. Once it gets cooled up add in the juice to it and mix well and store them in sterlized container

MURUKKU

INGREDIENTS Besan                            2 cups Rice flour                      1cup Red chilli powder          1/2teaspn Jeera powder                1/2teaspn Sesame seeds               1/2teaspn Asafoetida                     a pinch Salt                               1/2teaspn Butter                            1/2teaspn Water                             as required Oil                                  for frying METHOD Mix in all the ingredients together in a bowl with water to a thick dough. Now add in oil to a frying pan and drop the dough through the chakli  into the hot oil and reduce the flame for a few seconds and take them out when it turns crispy and drain it with tissue and store it in an air tight container.

APPAM

INGREDIENTS Raw rice                                1cup Urad dal                                 1/2cup Onions                                   1/4cup(finely chopped) Mustard seeds                        1/2teaspn Cumin seeds                            1/2teaspn Green chillies                           2-3nos Curry leaves                            1teaspn Asafoetida                               a pinch Salt                                          a pinch Oil                                           for cooking Soak the rice and urad dal in water and grind them to a fine paste as in for the dosa batter and let it ferment overnight. When its cooking time add in some oil in a pan and splutter some mustard seeds and cumin seeds,then add in the onions,green chillies,curry leaves, asafoetida and saute well and add them into the batter and mix well. Heat the appam mould with some oil and pour in a spoonfull of the batter into each of the moulds. Cook untill its done

GINGER CHICKEN...(IN A SIMPLE AND HEALTHY METHOD)

UNNI APPAM

Being one of my favourite kerala snack, I try them every now and then but was not able to get the exact softness which I used to get from my hometownu. But now evenI have also become an expert in unniappam making.:-):-).practice makes a man perfect. My kids also love to have   this; that's my motivation to make it often. Here I have made in a small quantity as v are only a few at home. Normally whenever we go for outing in malls when i come across this i would love having one. Finally i was wondering if i love this so much why dont i try making it back home itself.Thus finally i got it done.Now lets have a look at the recipe.   ingredients Corn                             250gms lemon juice                     1teaspn pepper powder               1teaspn chat masala                      1/2teaspn butter                               1teaspn chilli powder                     a pinch salt                                    a pinch Microwave the corn for 1 minute. Mix in all other ingredients to the corn and serve.

kunji kalathappam

Kaima rice/ponni rice         1cup(preferrably ponni rice) Dosa rice                          1/4cup Sugar                                1cup Maida                                2tbspn Fennel seeds                     1/2teaspn Cumin seeds                      1/2teaspn Cardamon                         a pinch Oil                                    for frying Salt                                  a pinch Soak kaima rice/ponni rice and dosa rice in water for about 2-3hours and grind them well with sugar and cardamon(try to grind without adding any water as sugar releases enough water and grinds easily) This has to come to a very smooth paste without any grains.The thickness of the batter may be like a dosa batter or a pouring consistency.But make sure that it doesn't become watery....... RAVA LADDOOO

INGREDIENTS Rava/sooji                                   1cup Ghee                                           2tbspn Sugar                                          1cup Milk                                            1/2cup Cardomon                                   a pinch Kismis,cashew ,badam                1tspn METHOD                       Heat a pan and roast up the rava/sooji very well. Now add in ghee and roast again untill its light brown in colour. Then add in sugar and cardomon and mix well. Add in milk to this and stir well untill its cooked.Now add in all the nuts and switch off the fire.Make small balls with it before it gets cooled up. Let this rest for a few minutes, as at the initial stage it will be soft and there are chances for it to get broken while serving.. This was a recipe which was purely experimental.
