UNNI APPAM

Being one of my favourite kerala snack, I try them every now and then but was not able to get the exact softness which I used to get from my hometownu. But now evenI have also become an expert in unniappam making.:-):-).practice makes a man perfect. My kids also love to have   this; that's my motivation to make it often. Here I have made in a small quantity as v are only a few at home. You may increase the quantity accordingly.          Rice                                     3cups         Banana  yelakki                5-6nos(small)         Jaggery syrup                      2cups        Coconut pieces                 1cup        Maida                                 1tbspn  Wheat flour.                             1cup        Ghee                                  2tbspn        Cardamon powder            a pinch        Sesame seeds                   1teaspnK.           Kismis                                    1tbsp       Salt                                  1/

NADAN FISH CURRY

INGREDIENTS Fish                                     1/2kg Shallots                               11/2cups(finely chopped) Ginger                                 1teaspn Garlic                                  11/2teaspn Chilli powder                      1teaspn Green chillies                       3nos Turmeric powder                 3/4teaspn Corriander powder              1/2teaspn Curry leaves                         1/2cup Salt                                      as required Mustard seeds                      1tbspn Tamarind(kudam puli)          1small Methi seeds                          1/4teaspn Oil                                        3tbspn Heat oil in a pan and add in mustard seeds and methi seeds once it stoops popping add in ginger,garlic,curry leaves and saute well.Add in onion and saute well, now add in all masalas and saute well.Add in tomato and mix well. SWEET CORN

Normally whenever we go for outing in malls when i come across this i would love having one. Finally i was wondering if i love this so much why dont i try making it back home itself.Thus finally i got it done.Now lets have a look at the recipe.   ingredients Corn                             250gms lemon juice                     1teaspn pepper powder               1teaspn chat masala                      1/2teaspn butter                               1teaspn chilli powder                     a pinch salt                                    a pinch Microwave the corn for 1 minute. Mix in all other ingredients to the corn and serve.

Kaima rice/ponni rice         1cup(preferrably ponni rice) Dosa rice                          1/4cup Sugar                                1cup Maida                                2tbspn Fennel seeds                     1/2teaspn Cumin seeds                      1/2teaspn Cardamon                         a pinch Oil                                    for frying Salt                                  a pinch Soak kaima rice/ponni rice and dosa rice in water for about 2-3hours and grind them well with sugar and cardamon(try to grind without adding any water as sugar releases enough water and grinds easily) This has to come to a very smooth paste without any grains.The thickness of the batter may be like a dosa batter or a pouring consistency.But make sure that it doesn't become watery....... RAVA LADDOOO

INGREDIENTS Rava/sooji                                   1cup Ghee                                           2tbspn Sugar                                          1cup Milk                                            1/2cup Cardomon                                   a pinch Kismis,cashew ,badam                1tspn METHOD                       Heat a pan and roast up the rava/sooji very well. Now add in ghee and roast again untill its light brown in colour. Then add in sugar and cardomon and mix well. Add in milk to this and stir well untill its cooked.Now add in all the nuts and switch off the fire.Make small balls with it before it gets cooled up. Let this rest for a few minutes, as at the initial stage it will be soft and there are chances for it to get broken while serving.. When it rests for a few minutes it will get a bit hard and you can serve them to your little ones who may enjoy having a quick bite on it. NOTE: While making balls spread your hands with
