Grape pudding

1St layer Black seedless grapes.       500gms Sugar.                                    11/2cup Water.                                    1/4cup Gelatin                                    3tbspn Water                                     3tbspn Keep a pan on flame and boil together above ingredients to a thick syrup. Once cooled transfer them to a mixer and grind lightly. Now transfer this to a bowl using a strainer. Soak gelatin in cold water and transfer them to the grape syrup. Stir this well. With help of a seive pour the jelly to pudding tray and refrigerate until set/firm. 2nd layer Fresh cream.                  200ml Milkmaid.                       1/2tin Grape syrup.                 1cup Gelatin.                           1tbspn Beat together fresh cream and milkmaid until thick. Transfer this to grape syrup and stir. Finally add in soaked gelatin and stir. Through a strainer transfer this again to a bowl. Now slowly with the help of a spoon pour it over the

COFFEE PUDDING

Fresh cream .                        750ml Condensed milk.                  1tin Powdered sugar.                  1/2cup Instant coffee powder.       1tbspn Gelatin .                                 1tbspn Cooking chocolate             200gms Milk.                                     1/2cup To a large bowl add in fresh cream,condensed milk and sugar and beat well with an electric beater. Take 3tbspn of boiling water and add in coffee powder and mix. Strain this to cream mixture and beat again.Now add melted gelatin and beat again until well combined. Strain this whole mixture to small ramekins or glass trays and refrigerate for about 1hr. Second layer: Melt cooking chocolate with milk and stir well until no lumps. Once it's cooled pour them over the set coffee and decorate as desired and refrigerate them back for another 4-5hrs and serve.

Homemade Laddoo

Boondi: Besan.                      1cup Water .                    1/4cup Baking soda           1/4tspn Oil .                           For frying  Mix together Besan,baking soda and water in a bowl. Heat oil in a deep pan and pour batter through a slotted spoon and fry boondis and transfer to a plate. Sugar syrup Sugar.                   11/4 cup Water .                  1/2cup Make a sugar syrup to a thick consistency Others Raisins.                 1tbsp Cashews.               1tbsp Cloves.                   3not Cardamon .           3nos Ghee.                     2tbspn Fry raisins,Cashews,cloves in ghee. Crush a part of boondis lightly and transfer to a bowl. when sugar syrup gets lightly cooled transfer them to the boondis. To this add in fried raisins, cashews,cloves and Cardamon powder and mix well until the sugar syrup gets dissolved with boondi. When it's warm grease your hands with ghee and make small balls from boondi mixture

Bread Pakora

For stuffing Potatoes.                      3medium  Onion .                          1no Green chillies.              1no Corriander leaves.      1/2 bunch (finely chopped) Garam masala.            1/2teaspn Salt  Bread slices Oil.        For outer covering  Gram flour.                   1cup  Rice flour .                     1tbspn Red Chilli powder.       1/2teaspoon Salt Baking soda.                 A pinch  Water.                        For mixing  Boil potatoes mash them well. Add in onions, green chillies,Corriander leaves,Garam masala and salt. Mix them well and keep aside. To another bowl mix besan, rice flour,chilli powder,salt,baking soda with enough water to not so thick nor thin consistency. Take each bread slice cut to triangular shapes. Spread 11/2tbspn of potato masala over it,dip them in besan batter and drop into hot oil facing the masala portion down. Flip on either sides and transfer them to tissues once done and serve

Potato.                2big Onions.                1no Carrot.                 1 no Green peas.         1/4 cup Green chillies.     1no Ginger,garlic crushed 1/4 tspb Chilli powder.     1/2tspb Turmeric powder.   A pinch Garam masala.       A pinch Salt Maida.                 1 cup Salt Water.                 For kneading Make a smooth dough with above ingredients. Heat oil in a pan, add chopped onion, green chili, crushed ginger garlic and salt and saute till soft. Add vegetables to this and cook for about 4 – 5 minutes. Add red chili powder, turmeric powder and cumin powder to this and saute till raw smell disappear and oil appears on top. Add cilantro and remove from flame. Add this to the mashed potato and mix well. Make it to 6 equal portions. Take a small ball from dough  and roll it lightly dusting little all purpose flour. Brush it with 1 tsp tomato ketchup and spread one portion of the vegetable over the puff pastry leaving the end.

Maida                                 11/2cup UnsaltedButter.                100gms Salt.                                      A pinch Sugar .                                1/4 cup Egg.                                      1no Sprinkles.                            4tbspn To a bowl add in Maida,butter,salt, sugar,2tbspn of sprinkles and egg and make a smooth dough. Refrigerate this for about 30mins. Roll them to sheets and cut into desired shapes and designs. Place them on baking trays and bake for 10 -15 mins at 170degree. Once it's done let it cool and remove from trays and serve..

Paal porotta

 Maida.                      2cups Egg.                            1no Salt Milk.                           For kneading Oil.                          For frying Ghee.                       1/4cup Knead together maida,salt,egg,2tbspn ghee/oil  in a bowl and keep aside for 4hrs. Then roll it to a chapati. Fold the sides. Roll again Again fold sides and roll again. Heat oil+2tbspn ghee in a pan and shallow fry this on either sides and serve immediately.

Motichoor laddoo

for boondi: 2   cup   besan 2   tbsp   rava / semolina  ¼   tsp   saffron food colour 1½   cup   water oil for frying To a bowl add besan,rava,food color and 1 cup water. Mix them well without any lumps. Add remaining water and mix.Keep this aside. Keep a frying pan on flame with oil.  With the help of a cheese grater or a slotted spoon drop in boodis to hot oil and remove once crispy. If the boondis are a bit thick just crush them in a mixer to get finer boondis. for sugar syrup: 1  3/4  cup   sugar ½   tsp   saffron food colour ½   cup   water ¼   tsp   cardamom powder ½   tsp   lemon juice 2   tbsp   cashew / kaju   chopped 2   tbsp   pistachios   chopped Instructions firstly, to a large pan add in sugar,water and food color and let it boil. But it should.not reach string consistency.To this add lime juice and cardamon powder and just boil. To this add in fried boondi and stir and  continue to cook for 2 -3 minutes or until s

Bread slices                                        6-8 Potatoes ( boiled)                               2nos Coriander leaves                              2tbspn Green chillies.                                  1no Garam Masala powder                 1/2teaspn    Salt Amchur powder.                          1/4teaspn Mix together above ingredients in a bowl except bread. Besan                                                  1cup Red chilli powder                            a pinch Garam Masala powder                  1/4teaspn Asafoetida                                        a pinch Baking soda                                     a pinch Water                                               as required Mix together above ingredients also and keep aside. Take each slice of bread either cut into triangles or squares and spread the potato mixture over it place another slice of bread over it. Dip this in besan batter and deep fry in hot oil until crispy.

Mango mojito

INGREDIENTS Mango Puree:            100 ml Ice cubes:                   crushed Club soda:                   1/2 cup Mintleaves:                8 Lemon:                        1/2, cut into wedges Sugar:                          1 1/2 tbsp A sprig of mint leaves and lemon slice to garnish.   METHOD: Into a serving glass add in the mint leaves, lemon wedges, and sugar. Muddle them with a muddler or with the back of a wooden spoon. Muddle or squash the lemon, mint, and sugar. Add in the mango puree, and give it a stir. Top with crushed ice cubes and pour in the sparking soda. Stir well, serve with a sprig of mint leaves and a slice of lemon. Serve immediately. If not you can pour in soda just before serving .

CORN TIKKI

  Sweet corn.                 1cup Potatoes .                     2big Ginger,garlic.             1teaspoon Green chillies.           1no Garam masala.         1teaspn Bread crumbs.           1/4cup Grind together sweet corn,ginger,garlic and green chillies to a coarse paste. Transfer this to a bowl. To this add in boiled potatoes, salt, breadcrumbs and garam masala and mix well. Take small balls flatten them in your palms and toast them in a pan with 1tbspn of oil.  Flip them on either side and let them cook.

Honey glazed chicken drumsticks

Chicken drumsticks.         5nos Pepper powder.                 1teaspoon Chilli powder.                   1/2teaspn Ginger,garlic paste.           1/4teaspoon Soyasauce.                        1teaspoon Salt Marinate the chicken drumsticks with above ingredients and refrigerate for 1hour. Place this in a preheated oven for 20mins in grill+convention mode. For sauce Honey                            3tbspn Soyasauce.                    2tbspn Ginger and garlic          1/4 teaspoon Oregano Vinegar.                        1teaspoon White sesame seeds. To a pan pour some oil to this add some honey,soya sauce, ginger, garlic and vinegar. Mix this together until it reaches a thicker consistency.  To this add in grilled chicken pieces and saute until it gets well coated with honey mixture.once it's done switch off the flame. Sprinkle some sesame seeds and oregano and serve.

Basbousa

Semolina.              2cup Sugar.                    1/2cup Butter.                   100gms  Milk.                       1cup Baking powder.    1tsp Baking soda           1/2tsp To a mixing bowl add semolina,baking powder and baking soda. To another bowl add melted butter,sugar and milk and mix gently. Transfer this to semolina mixture and fold well to a cake batter form. Transfer this to a greased cake.tin and decorate with few nuts. Preheat the oven at 180deg and bake for 30mins. For sugar syrup Sugar.                1/2cup Rose water       1tbspn Water                1cup Lemon juice     1tspn  Boil sugar and water together to a syrup and finally add rose water and lemon juice and stir. Let this rest until cooled.  Once the cake gets baked remove from the oven and pour the sugar syrup over it immediately.(do not skip this step)

Pesto pasta

For pesto sauce Basil leaves.                              1cup Spinach .                                    1/4cup Pine nuts/walnuts /cashews.  1/4cup Garlic .                                        3nos Salt.                                             Pepper powder                         1teaspn Parmesan cheese.                     As needed Olive oil Grind together above ingredients in a processor to a smooth paste. Heat butter in a pan and add this sauce to it and stir for few minutes. Boil macaroni / pasta as per packet instructions and drain off any excess water. Transfer the cooked pasta to the boiling pesto sauce and mix well until it reaches ur desired consistency. Serve them hot.

Jack fruit seeds laddoo (chakka kuru laddoo)

Jackfruit seeds .      1kg Jaggery .                    1kg Coconut .                   1cup Clean up the seeds . Place them in sun for few days and remove skin and clean properly. Take a large vessel and roast the seeds well until lightly black in color. Cool this up and grind in a mixer to a fine powder with few granules or according to your desired consistency . To this add jaggery broken to pieces and coconut and again grind in mixer until combined.  Transfer this to a large bowl and make small balls of it and serve.
