Sev is a very basic ingredient used in most of the chaats.It is one of my favourite too.Back home we make it as an evening snack on some lazy days.This recipe is so simple to make and requires only a few ingredients which is always available at home and at the same time it is very tasty when had alone also.We dont even know how it vanishes when it is being served. Besan                              1cup Asafoetida                       a pinch Salt                                 1/4teaspn Turmeric powder            1teaspn Hot oil                             1teaspn Mix all ingredients  together with water to a slightly watery dough.  Now with the help of a chakli drop in the besan dough to hot oil and turn up immediatly and transfer to a tissue.When it gets cooled up store in an air tight container.

OATS DOSA IN MINUTES

If being tired of having oats daily,here is a very quick and healthy breakfast recipe for all. Oats                                        1cup(Powdered in a mixer) Rava                                       1/2cup Rice/wheat flour                    1/4cup Yogurt                                    1/2cup Salt                                         1/2teaspn Onions                                    2tbspn(finely grated) Green chillies                         2nos Water                                      11/2cups Mix all the ingredients together in a bowl to a loose consistancy and keep aside for a few minutes. Now in a dosa pan pour the mixture and swirl it around and let it cook (this takes more time to cook than the normal dosa so you have to wait for a few extra minutes).If you try twisting it before its done there are chances for it to break through.Then turn it to the other side and let it cook again When its done serve them with some chutney of personal choice.

MANDA(a sort of samosa with sooji filling)

Rava/sooji                                           11/4cup Sugar                                                    1tbspn Cardamon powder                              a pinch Maida                                                  11/2cups Salt                                                      1/2teaspn Wheat flour                                          1tbspn Oil                                                        for frying Ghee                                                     1tbspn Heat ghee in a pan and slightly roast the sooji,then add in sugar and cardamon powder and roast again untill it gets well mixed. In another bowl mix maida,salt and wheat flour and knead well as for chapathis. Now take small balls out of the dough and roll up as for chapathis. Divide the rolled up dough into 4 equal parts with the help of a knife. Now each piece comes to the form of a cone.Take each cone fill it with a tablespoon of the sooji in the middle and fold fro

ULLI CHAMANTHI

Ulli chamanthis are being made mainly by shallots(sambar onions).This goes well with idlis and dosas accompanied by sambar and chutneys etc.Here i have produced a very simple recipe of ulli chamanthi.           CONTENTS Shallots/Sambar onions            1cup   Red chillies                                   2nos   Curry leaves                               2-3nos   Salt                                              1/2teaspn   Curd                                             1/2teaspn   Oil                                                1 teaspn  In a pan slightly roast up the onions, red chillies and curry leaves   Transfer this to a mixer and grind well. Add in salt and curd to this and mix well. Then transfer this to a bowl and   pour oil over the chutney.

BANANA HALWA

Bananas are very common amongst the keralites.There are a lot of dishes which are being made with banana.Banana halwa is a rich variety easily available in stores.Now you can make this back home with less ingredients and  alter according to personal tastes.  Banana (big nendran)                                 4nos Sugar                                              3tbspn Cardamon    powder                     a pinch   Water                                            1cup Ghee                                              3/4cup Badam                                            1tbspn Cashew                                            1tbspn Kismis                                                1teaspn   Boil sugar  in water untill all the crystals gets dissolved. FRENCH FRIES

Potatoes                                          2-3nos Salt                                                 a pinch oil                                                  for frying Peel the potatoes and cut them finely or put in a food processor and slice them.        Soak the potatoes in water for a few minutes to remove the starch. Now strain the water through a staier and when the water has left put them in hot oil and fry lightly and remove them from fire when its half done. Again keep the oil in high flame and drop in the half cooked french fries to it.  

PAZHAM PRADAMAN

I had a lot of bananas back home as it was being bought for my baby who is 7mths old and being feeded her daily with these bananas even she got bored and never ate the rest.So i was wondering daily what  to do with these bananas so i came up with this idea. When finally i made it,it was really yummy and my little one also enjoyed having it from our bowls.So it was one of the most happiest days for me as i was able to satisfy not only my husband but also my tiny one.
