MIXED FRUIT MOCTAIL

Apples                                        1no Banana(small)                            1nos Water melon                              1cup(diced without seeds) Rasberry syrup                          1teapsn Milk                                          1cup Ice cubes                                   1/2cup Water                                        11/2cups Sugar                                         3tbspn  Mix in all the ingredients together in a blender and serve it chilled.  

WATER MELON SLUSH

Watermelon                                  2cups( diced without seeds) Lemon juice                                 1/4cup Sugar                                           4tbspns Crushed ice                                 1cup Sprite                                          1cup Put in all the ingredients into a mixer except sprite and give a quick blend, and serve them in tall glasses.Finally pour in some sprite slowly by reverting a spoon.

INGREDIENTS Eggs                              15nos Sugar                              3cups Water                             4 cups Cardamon                      1pinch Milk powder                  1teaspn Maida                            1tbspn METHOD Separate egg yolks and egg whites into 2 separate bowls. Beat the egg yolks and strain up the egg yolks through a strainer. Take a thick bottomed vessel and pour water into it and boil well, now add in sugar into this and stir well untill it forms up a good syrup. Now put a drop of egg white into it so as to remove up all the impurities, now strain this syrup also. Place it back on high flame and let it boil well. Take a small disposable glass with a small hole beneath it and pour in the beaten egg yolks into it by closing the hole with the finger tip.  Now remove the finger from the hole and pour in the egg yolk to the boiled syrup in a circular motion so that it forms a garland. KANAVA ROAST/ SQUID ROAST

I NGREDIENTS Squid                               500gms Onions                              3-4nos Ginger                              1small Garlic                                2tbspn Green chillies                     3-4nos Turmeric powder              1/2teaspn Chilli powder                     1teaspn Corriander powder             11/4teaspn Garam masala                    1teaspn Pepper powder                   1teaspn Salt                                    1teaspn Water                                 for cooking Curry leaves                        1/2cup Heat oil in pan and add in the ginger,garlic and saute, once done add in the curry leaves. Now add in the onions and green chillies and fry them, when its done add in all the masalas and roast it on a low flame until the raw smell leaves out.Now add in the squid and mix well.Add some water and salt and let it cook by closing it with a lid. This goes well with rice,chappathis,pathiri etc...

ULLI VADA/ONION VADA

  INGREDIENTS Onions                             5-6nos Green chillies                   2nos Curry leaves                   1/2cup Rice flour                       1/2cup Besan                            2cups Salt                                for taste Ginger                           small pc Asafoiteda                    1teaspn Oil                                for frying Take a large bowl and mix in all the ingredients together with some water and make a smooth batter.Dont make the batter too watery or too hard.Now make a small ball with the mixture and flatten them on your palms or on a plastic sheet and deep fry them and turn them occationaly and once it turns brown remove from fire and tranfer to a kitchen towel and serve it with some ketchup. This would be a perfect combination for a tea break..........

VEGETABLE SAMOSA

PAKKAVADA

Rice flour                 1cup(finely powdered) Besan                        2cups Salt                           for taste Chilli powder           11/4tbspn Asafoetida                 1teaspn Curry leaves             1cups Oil                             for frying Luke warm water      11/2cups In a bowl mix up the rice flour and water with some salt and make smooth dough. Now add in the besan and more water and chilli powder,asafoetida etc and make a soft dough. Now take the chakli and take the narrow slit which results in a tape form. Heat oil in a pan.Put the dough into the chakli and press it into the oil and fry them. Remove this into a kitchen towel and once it gets cooled up break into small pieces and garnish it with the fried curry leaves which adds an extra flavour for it.

          Sarkara payasam normally reminds me of the prasadams which we get from temples.Ahhh i just enjoy having it. Infact we do plan for temple visits if its sure that we will get these hot payasams.They normally serve them in leaves which gives an extra taste for it and being really hottt its justtttt eeeemmmmm....... This one i had just tried back home after the navarathri festival ,with the rice which i had kept for the pooja in my house. This simple recipe can be made on any special occations with simple ingredients and a very simple process.The extra flavour of the ghee enriches the dish and gives a good aroma. AVALOSE PODI
