PINEAPPLE KESARI

Pineapple                       1cup (finely chopped) Sugar                             3/4  cup Water                            2cups Sooji/rava                      3/4cup Cardamom                     1no Cashew and kismis.        1/2cup Ghee                             1/2cup               Keep water to boil in a pan to this add in chopped pineapple and sugar and let this cook. In another pan pour in ghee and add in cashews and rava and roast gently until the cashews are fried. To this add in the boiling pineapple and stir quickly,keeping the fire on a low flame. When the rava gets cooked transfer these to bowls and serve.

COFFEE PANNACOTTA

Milk                               1cup Fresh cream                200ml Gelatin                          1tbsp Cold water                   3tbspn Coffee powder            1teaspoon(any) Sugar                           112c ups Vanilla essence         1/2teaspoon Soak gelatin in cold water and let this melt. Keep a thick bottomed pan on fire,to this add in milk and coffee powder and let it boil. When the coffee is ready, pour in some vanilla essence/vanilla beans and stir gently. Then add in sugar and soaked gelatin and mix thoroughly.Now switch off the flame and add in fresh cream and mix gently until well combined. Transfer these to small bowls and refrigerate for about 1hour and demould them to serving plates. Note: To demould the pannacottas dip them lightly in hot water.

Chocolate banana smoothie

Banana                            3nos(ripe) Milk                                  21/2cups Coco powder                 1tbspn Condensed milk            1tbspn Grated chocolate.         1tbspn Sugar                               1cup Figs                                   2nos In a mixer drop in 1cup milk,condensed milk,1/2 cup sugar and coco powder and beat well and place them in a freezer until frozen. Then  add in the remaining ingredients to the mixer and beat again;finally the frozen coco milk goes in, which has to be beaten up again and served chilled.

Chicken cutlets

Chicken                       11/2cups Onions                        2nos Green chilly                2 Ginger                         1small piece Potatoes                     2medium(mashed) Curry leaves                1tbsp Pepper powder           1tsp Garam masala              1tsp Turmeric powder           a pinch Chilli powder                 1tsp Eggs                                2nos Bread crumbs                2cups Cook up the chicken and shred them. Heat oil in pan, to this add in onions and saute until translucent. To this add in ginger,green chilies,potatoes,curry leaves,salt,shredded chicken and all masalas and saute again. Make this to a dry masala. Now take  small balls out of them and dip in egg and roll out in the bread crumbs and make desired shapes of them and deep fry or shallow fry them until golden brown in colour.

Eggless biscuits

Flour               1cup Sugar               1/2cup Dalda                1/2cup Dump in all the above ingredients to a vessel and RUB them gently between both your hands to form a sand texture. Then make small balls out of them and place in a preheated oven at 180deg for 5_10mins. Note: Oven temperature varies according to the machine being used. Make sure it doesn't turn brown

Jackfruit icecream

Jack fruit                           1small piece Fresh cream                      1cup Condensed milk                1/2tin Sugar                                1/2cup Milk                                  3/4cup Chop out a small piece from a ripe Jack fruit and discard its skin,threads and nuts. Take  the fruit and saute up lightly on a low flame with 2tbsp of sugar. When this gets cooled down grind them to a fine paste and keep it refrigerated. Now take a big vessel and put the  rest of the ingredients and mix until well combined. Finally add in the cooled jackfruit to this mixture and combine. Transfer this to a container and get them refrigerated again preferably overnight. Then take it out and using a mixer just give a quick churn and refrigerate again for about 2-3hrs. Now the ice cream will be ready to be served to your loved one's

Whole wheat pizza with chicken toppings

FOR THE DOUGH Wheat flour           2cups Dried yeast           11/2tsp Warm water         4tbspn Sugar                   1tsp Water                   for kneading Salt                      3/4tspn TOPPING Chicken                  150gms(boneless) Onions                    1no Capsicum                1tbsp chopped Pepper powder       1tsp Salt                         as required Chilli powder           1tbsp Tomato sauce          3tbspn In a small bowl soak yeast in water with sugar. Now get a big pot add in flour and salt and mix. To this add in soaked yeast and knead them to a dough and keep aside to ferment. Shred up the cooked chicken.  In a pan add in the rest of the ingredients and saute well ; to this add in shredded chicken and toss well. Make sure you get a dry chicken masala.Once the dough doubles in quantity,take a pizza pan and spread  the dough and over it spread up the chicken masala. Preheat the oven to 180deg and place the

CHAKKA VARUTHATHU(JACKFRUIT CHIPS)

Jackfruit                                       1medium(raw) Turmeric powder                          1tspn Salt                                               1tbspn Water                                            3tbspn Oil                                                  for frying Clean off the skin of the jackfruit and take out the fruit and discard the nuts and fine threads on the fruit. Now chop the fruit to fine fingers and dunk them to the turmeric,salt and water mix. Let the chips be coated up well. Then take few of them and drop in hot oil for frying.Remove them from oil when it turns crispy. Now these chips are ready to be stored in boxes for days.
