NACHOS

JalapeƱo nachos                  1pack Plain nachos                       1pack Onions                               1no Black beans                       1/2cup Olives                                1teaspn Corn                                  1/4cup Parsley leaves                    1teaspn Squash                               1cup Cheese                              1/2cup Thick yogurt                      90g To a big plate spread the jalapeƱo nachos over it spread onions,olives,squash, corn,Parsley leaves and black beans. Again spread the plain nachos and again spread the remaining veggies and over it spread cheese.  Place this in a microwave for 5minutes.Remove them from microwave and add 2 scoops of yogurt on top and serve. Here you can add any veggies according to personal choice.

MUTTA CAKE

This is an malabar recipe mainly made of eggs and sugar. Eggs                                          5nos Bread                                        2nos Cardamom powder                   1teaspn Sugar                                        7tbspn Badam                                      3nos Milk                                         1cup Soak badam in 1/4 cup of milk for about 2hrs. Beat eggs,sugar and cardamon on high speed with an electric beater. Soak bread in remaining milk after cutting its edges. Now transfer the soaked bread and badam with milk and beat again until the bread gets well grinded. Transfer this to a nonstick vessel greased with ghee and place the lid. place these on a dosa pan ; a kind of double boiling.

Semolina /Rava                       1/2cup Egg                                             3nos Sugar                                         6tbspn Cardamon powder.                 1/2teaspn Ghee                                            1teaspn Roast up the rava in a pan until it's raw smell leaves off. Beat together egg,sugar and cardamon powder until fluffy. Slowly add in roasted Rava and mix. to this add in 1teaspn of ghee and stir again until combined. Transfer this to a nonstick vessel smeared with ghee. Keep a dosa pan on fire; place the nonstick vessel over it and cover them with a lid. After 5mins open them and garnish with nuts.Keep this on fire for about 15mins or once pricked comes out clear.

HOMEMADE RAISED DONUTS

Maida                                  2 1/4cup Active dry yeast                11/2 teaspn  Unsalted butter                 40gms(room temp) Granulated sugar              3tbspn Salt                                       1/4teaspn Milk                                     1/2cup(lukewarm) Egg                                       1 large Topping Powdered sugar/icing sugar Chocolate sauce In a large bowl mix together maida and yeast. Add butter to this and rub them with your fingers until you get the flour mixture as coarse crumbs. Then stir in sugar and salt. Make a well in the centre of the mixture and add luke warm milk and lightly beaten egg and knead until you get a smooth dough. You may add in more flour if sticky. Knead them well. Place this dough to  a slightly greased bowl and cling them with a plastic wrap and let rise in a warm place until doubled. This may take around 2-3hrs. Sooji /Rava.                       2cup  Maida.                               1.5cup Jaggery syrup.                   1 3/4 cup  Milk.                                 1cup Banana                             8nos Baking soda.                    1/4teaspn Sesame seeds                   1tbspn Coconut pieces                2tbspn Ghee                                4tbspn Cardamon                        2_4nos Salt.                                 1/4teaspn Grind the bananas in a mixer to a smooth paste. To a pan roast the coconut pieces in ghee until golden brown in colour. Keep them aside. Saute rava in a pan until it leaves the raw taste.Switch off the flame and once it gets cooled transfer this to a bowl.To this you may add in maida, jaggery,grinded banana šŸŒ,cardamon,  and milk and mix until well combined . THen add in baking soda and salt and stir gently. Finally add in sesame seeds and roasted coconut and swirl gently. Keep this aside for around 1 1/2

Peanut masala chaat

Peanut.                                 2cups Onions.                               1no Carrots.                               1no Tomato.                              1no Corriander leaves               2tbspn(chopped) Chilli powder.                    1teaspn Salt.                                   As needed Lemon juice                        1teaspn Chaat masala.                    1/2teaspn Pressure cook the peanuts with enough water until cooked. To a large bowl mix together the above ingredients and serve.

NEY PAYASAM

Broken matta rice                              3/4cup Jaggery                                              350gms Ghee                                                  6tbspn Cook the rice with enough water in a cooker as a porridge. Melt jaggery in a sauce pan and strain them to remove if any impurities.Transfer this to the cooked rice and start stirring until combined .Now add in a generous quantity of ghee and stir continuously to a thick consistency. Now the neipayasam is ready to be served.

CHEESE PARATHA

Wheat flour                                       2cups oil                                                     1tbspn salt                                                    11/4teaspn Water                                                for kneading To a large bowl add in above ingredientss and knead to a smooth dough Mozarella cheese                             1cup onions                                              1/4cup Green chillies                                  1no Salt                                                  a pinch Mix together above ingredients Make small balls out of the dough and roll them to medium sized parathas.Place a generous quantity of cheese mixture over them and place another rooled out paratha and stick the sidesgently.Now dust in moree flour and roll them again. Place them over a hot tawa and let it cook on either sides. Serve them hot with chutney or raita
