Orange pudding

Orange juice                        2cups(Fresh juice) Condensed milk                  1/2tin Gelatin                                   11/2tbsp Whipping cream                  2cups Keep Orange juice for double boiling on a low flame, to this add in gelatin and mix well and switch off the flame. In another bowl fold together whipping cream and condensed milk. To this add in the gelatin mixed Orange juice. Now transfer these to serving bowls once they reach room temperature and refrigerate for about 3hrs. When they are done you may serve your guests directly in the bowls or you may transfer to plates and serve. Note: 1.Do not add any water while extracting Orange juice.

Milk pudding

Milk                            1/2 litre Sugar                          3/4cup Vanilla essence        a drop Gelatin                        2 tbsp Oreo biscuits            1pack Butter                          1teaspoon Cold water                  5tbspn Soak gelatin in cold water. Crush Oreo biscuits with your hands to a fine powder,to this add in butter and rub well. Take a large pudding bowl and place the biscuit powder   in the bowl and press them gently with your fingers. Refrigerate this till the cooking process is done. Keep the milk to boil; once it comes to a boil , add in sugar and vanilla essence and stir until the sugar dissolves. Finally add in soaked gelatin and mix well. When this milk reaches room temperature transfer them to the refrigerated pudding bowl  and refrigerate again for another 2_3 hours. ARIKADUKKA/STUFFED MUSSELS

Arikadukka is a perfect malabar snack,mostly famous amongst the muslim community.Myself and my whole family are hardcore fans of it. A big thanks to my bestieeeeeeeeeee who guided me throughout the  process.I believe without her this recipe would have been incomplete.The mussels being stuffed with rice flour which gets grinded up with fennel seeds and shallots gives and extra aroma to this snack.Always try to make this in large quantity,no one can eat just one.........As it was my first approach towards it,i just made a few.I bet all the food lovers if u happen to missout this recipe, its definetly gonna be a big big big miss. Mango popsicles

Mango                  1no Milk                     1cup Sugar                   4tbsp Lemon juice         1tspn Dump in all the above ingredients to a mixer and make a smooth paste. Transfer them to plastic glasses and cover with aluminum foil and place them in freezer,after 2hrs make small holes on the foils and place ice cream sticks on the glasses  OR Pour in mango mixture to kulfi moulds and place in freezer for 1day. Just immerse them in Luke warm water and demould them and serve.

Corn cheese balls

Corn                                        1cup{cooked} Mozzarella cheese                   1/2cup(shredded) Butter                                      1tbsp Maida                                      1cup Milk                                       1cup Salt                                         1/2teaspoon Pepper powder                       1tbsp Corriander leaves                   1/2cup(chopped) Bread crumbs                         1cup Carrot(finely grated)              1small piece Potatoes                                  3nos(cooked and mashed) Ginger (chopped)                   1small piece Green chillies                         1no Corn flour                               1/2cup Keep a pan on fire,add in butter and let it melt ,now add in 2tbspn of maida and saute,to this add in milk and stir well until there are no more lumps.The white sauce is done.Now transfer this to a large bowl. Give a quick swirl to the corn in a mixer(not to a paste form).

MANGO PANNACOTTA

For mango layer Mango                           1medium sized and medium ripe Sugar                              4tbsp Lemon juice                    2tspn Gelatin                                11/2tbsp Cold water                        3tbspn Soak gelatin in cold water Cut the mangoes and grind them in a mixer without any water. Transfer this to a non stick pan kept on fire and stir them gently, add in sugar and lemon juice and whisk until it gets dissolved. Finally add in gelatin to this mixture and let it boil.  Now switch off the flame and let it cool down to room temperature, transfer these to small bowls or ramekins and keep refrigerated for about 1hr or until set For milk layer Milk                                2cups Sugar                              5tbspn Vanilla essence             1/2tsp Gelatin                            2tbsp Cold water                       4tbsp Soak gelatin in cold water Heat milk in a vessel,to this add

Pineapple icecream

Pineapple                               1cup Water                                       1/2cup Whipping cream                   2cups Condensed milk                    1/2tin Sugar                                       1/2cup Pineapple essence                1teaspoon Keep a pan on fire, to this add in water,pineapple pieces and sugar and let it cook stirring occasionally. Once it gets cooked switch off the fire and let it cool and once cooled transfer them to a juicer. To a bowl add in cream,condensed milk,sugar and pineapple essence and beat well. Finally add in the pineapple juice and beat again. Transfer these to a freezed bowl and cover up with a foil and place them back in the freezer. Later, after 3_4hrs take them out and mix well with a spatula. When it's well set scoop them and serve in bowls with few pineapple bits.
