EASY TO COOK LEMON RICE

BEETROOT CHUTNEY

INGREDIENTS 1. Beetroot                                  1no 2. Garlic                                      4cloves 3. Red chillies                             2nos 4. Baby onions                           5nos 5. Salt                                         a pinch 6. Sugar                                     1/2teasp 7. Water                                     2tbsps METHOD Grind in all the ingredients together untill it becomes a fine paste.The healthy beetroot chutney is ready.This serves good with biriyani.

VEGETABLE CUTLET

INGREDIENTS Potatoes                             2nos Carrots                               2nos Beetroot                             1no Green peas                         1/2cup Onion                                 1no Ginger                                1/2tbsps Garlic                                 1tbsps Curry Leaves                     1/2cup Salt                                     as required Bread Crumbs                    3cups Oil                                      for frying Water                                1cup METHOD In a pressure cooker add in the sliced  onions,ginger, garlic and curry leaves and saute them well.Now add in all the vegetables, salt and water and cook them well .Make sure that the entire water is drained off. Now add in half the bread crumbs to this & mix well,this would tighten up the mixture. Make medium sized balls by patting it in your hands. Dip this into the bread crumbs and pan fry it.

ARI UNDA (KERALA STYLE)

Ingredients Red rice                2cup Jaggery                 2cup(grated) Coconut                1cup Cardamom            1/2tsp  METHOD Put the rice into a pan on fire and start roasting it untill it stops spluttering and  its colour changes.Now put them in your mixer and grind it to a thin powder,seive them and again roast and grind untill its fully done.Again add the jaggery , cocunut & cardamon to the rice powder & mix properly. Then make it to medium sized balls  & serve.This can be stored in air tight containers for few days also.

Keep a large vessel on fire. KINNATHAPPAM

This appam is normally made in a traditional way by stirring in big urulis and after cooking spreading them on kinnam/vessels and when they are cooled they are being cut into various shapes and served.This is one of the authentic malabar dishes and  something which cannot be left out in some of the major functions like post marriage visits,baby shower etc.This recipe is well blended with coconut milk,jaggery and bengal gram/chana dal.The crunchiness of the chana dal is something which adds an additional flavour to the dish. As i like the taste of the  channna dal i have used a bit more quantity than needed,if u wish u can alter as per personnel wishes.
