MUTTA MAALA



INGREDIENTS


  1. Eggs                              15nos
  2. Sugar                              3cups
  3. Water                             4 cups
  4. Cardamon                      1pinch
  5. Milk powder                  1teaspn
  6. Maida                            1tbspn

  1. Separate egg yolks and egg whites into 2 separate bowls.
  2. Beat the egg yolks and strain up the egg yolks through a strainer.
  3. Take a thick bottomed vessel and pour water into it and boil well, now add in sugar into this and stir well untill it forms up a good syrup.
  4. Now put a drop of egg white into it so as to remove up all the impurities, now strain this syrup also.
  5. Place it back on high flame and let it boil well.
  6. Take a small disposable glass with a small hole beneath it and pour in the beaten egg yolks into it by closing the hole with the finger tip. 
  7. Now remove the finger from the hole and pour in the egg yolk to the boiled syrup in a circular motion so that it forms a garland.
  8. Now stir it gently without causing any breakage and remove it from fire by sprinkling some water on it and place it onto a plate slowly.
MUTTA SURKKA

Once the balance sugar syrup used for mutta maala gets cooled nicely,pour it into the egg white and add in cardamon,maida and milk powder and give a quick twirl in a mixer and pour it into a greased tray and keep it in a steamer and steam up for a few minutes.Once it gets cooled cut into desired shapes and serve it up with mutta maala..
