UNNAKAYA (MALABAR SPECIAL)
- Banana big(nenthrakaya) 4nos
- Coconut 1cup
- Nuts and kismis 1/2cup
- Sugar 1/2cup
- Oil for frying
- Ghee 1teaspn
Microwave the bananas for about 2mins and smash it nicely using your hands.You can also use the steamer and boil the bananas.Heat ghee in a pan add in the coconut,nuts,kismis and sugar and mix gently. Now make a small ball of the mashed banana mixture and flatten them on your palms, and take a spoon full of the coconut mixture and place it on the flattened banana and fold up from both sides and make the shape of an unnakka using your hands. Now heat oil in a pan and shallow fry the bananas.You can also make a light mix of maida,salt and water and dip each unnakka in it and deep fry them.
