CHICKEN KURMA


INGREDIENTS


  • Chicken                                        1kg
  • Onions                                          2big
  • Garlic                                            1/2cup
  • Ginger                                           1/2cup
  • Green chillies                                  8nos
  • Curry leaves                                  1/2cup
  • Corriander leaves                          1/2cup
  • Tomatoes                                      1small
  • Pepper powder                              1tbspn
  • Cashew paste                                1/2cup
  • Salt                                                1teaspn
  • Coconut                                         2cups
                             Take 2cups of coconut and extract 1st milk (thick milk)and 2nd milk (mixed with some water)from it.Keep this milk aside in two separate bowls.
                               Normally i grind the coconut in the mixer for about 30secs and then extract the milk as it would be much easier to get the milk.Normally i drain it using a big seive but if the milk has to be extracted on a large quantity i use the thorthu/thin bath towels.
                               Heat oil in a pan saute the onions,garlic,ginger ,green chillies,tomatoes and some curry leaves once its well sauted add in the chicken pieces,2nd milk,pepper powder,salt etc and get it cooked.Once its cooked add in the first milk and cashew paste and the remaining curry leaves and corriander leaves and let it cook on a low flame for about 1mins and switch off the flame and serve them with hot appams/ghee rice.
                             The same procedure can be used for the mutton stew also,but the cooking time would be much longer as the mutton needs more time to get cooked.It may take about 5-6 whistles in the cooker.
