FISH BIRIYANI



INGREDIENTS



  • Fish(preferably king fish)                                 1kg
  • Basmati rice                                                    3cups
  • Turmeric powder                                            1teaspn
  • Chilli powder                                                  11/2tbspn
  • Corriander powder                                         1tbspn
  • Onions                                                            4-5nos
  • Ginger garlic paste                                          11/2tbsps
  • Coriander leaves                                            1 cup
  • Mint leaves                                                    1/2cup
  • Green chillies                                                 4big
  • Cardomon powder                                        1/2tbsps
  • Cinnamon                                                     1/2tbsps
  • Poppy seeds  (kuskus)                                 1/2tbsps
  • Fennel seeds(perum jeerakam)                     3/4tbsps
  • Nutmeg                                                        a pinch
  • Cloves                                                         1/2tbsps
  • Salt                                                              as per taste
  • Ghee                                                           1/2cup
  • Kismis & cashews                                       1/2cup
  • Oil                                                               for frying
  • Water                                                          5cups
  • Lemon juice                                                 1/2cup

Marinate the fish with turmeric powder,chilli powder and salt & let it rest for 15mins.Now heat oil  in a pan add in the marinated fish and fry them lightly and keep aside.To this oil add in the onions,gingergarlic paste,1/2of the grinded coriander & mint leaves,grounded spices,chilli powder,turmeric powder,corriander powder,salt, etc and saute it well. 
Heat ghee  in a vessel,put in the drained rice and stir it well. Now add in 5cups of water and salt and let it cook.
Take another thick bottomed vessel layer it with a few of the fried fish and above that spread some masala, over that put some cooked rice and spread it evenly.Now smear some ghee,chopped mint and corriander leaves, lemon juice and the cashew & kismis .Repeat this process again and cover it with a lid and keep it in a low flame for about 10mins.Now switch off the fire and let it set for half an hour without opening the lid.After half an hour remove the lid and and make sure you dont mix it vigorously as the fishes may get broken up.
