KASHMIRI PULAO


                           

                               Unlike the normal pulaos which includes mainly vegetables/nonveg ingredients this is a sweet pulao with various nuts and fruits.If you dislike having fruits with the rice you can opt for only nuts,the option is just up to you.

INGREDIENTS:
Basmati rice                                         2cups
Cinnamon sticks                                   1no
Green cardamon                                    3nos
Black pepper                                        1/4teaspn
Bay leaf                                                1no
Dry ginger powder                                1/2teaspn
Cloves                                                   3nos
Saffron                                                 2 pinches
Fennel powder                                      1/2tespn
Milk                                                      2tbspn
Ghee                                                     2tbspn
Salt                                                       1teaspn
Water                                                    4cups

Pomegranate seeds                              11/2teaspn
Pineapple                                             11/2teaspn(finely chopped)
Apple                                                   1teaspn
Onions                                                  2tbspn
Cashews                                               1tbspn
Kismis                                                  1teaspn
Almonds                                               3-4nos(chopped)
Walnuts                                                 3nos
Sugar                                                     1teaspn


METHOD:

  • Soak saffron in warm milk.
  • Heat ghee in a deep nonstick vessel add in all the spices and fry them lightly then  add the rice to it and roast well until the ghee gets well coated with the rice.To this add 4cups of water and soaked saffron with milk and let it cook
  • In another pan pour some oil and fry the onions to this add in about 1/2teaspn of sugar and get it caramelised. Now transfer them to a bowl and add more ghee to the pan and roast the nuts.and keep them aside.
  • In the same pan add the chopped pineapple and apple pieces and fry slightly by adding a pinch of sugar over it.
  • When the rice is cooked ,switch off the flame and you can transfer  the fried pineapple and apple and pomegranate.Again add the fried onions and nuts and stir them well with the rice.
  • Finally garnish them with more nuts and fruits and serve them with some sweet raita.
