HOMEMADE SCHEZWAN NOODLES
- Plain noodles 200gms
- Carrots 1no
- Capsicum 1no
- Green peas 1/4cup
- Onions 1/2cup
- Pepper powder 1/4teaspn
- Salt 1/2tespn
For the paste
- Chilli flakes 1teaspn
- Tomato sauce 2tbspn
- Vinegar 1tbspn
- Ginger and garlic 1teaspn
In a large vessel keep about 2cups of water to boil.To this add in 1/4teaspn of salt.Add in noodles and let it cook for another few minutes.Make sure that the noodles is not over cooked.Then strain off the water or pour some cold water over it to avoid overcooking.
In another pan pour some oil and slightly fry the onions,carrots,cooked green peas etc.When its almost done add in salt,pepper powder and capsicum and fry again.Then add in the grounded patse and fry again.Then add in the cooked noodles and toss them untill well incorporated.
Now transfer them to a serving bowl and serve.
