VEGETABLE BIRIYANI
- Basmathi rice 3cups
- Onions 4nos
- Carrot 1cup
- Green peas 1/2cup
- Capsicum 1/2cup
- Mushrooms 1/2cup
- Beans 1/2cup
- Salt as required
- Water 5cups
- Ghee 1cup
- Cashew and kismis 1/2cup
- Fried onions 1/2cup
- Cardomon 1tbspn
- Poppy seeds 1tbspn
- Cinnamon 1/2tbsps
- Fennel seeds(perum jeerakam) 3/4tbsps
- Nutmeg a pinch
- Cloves 1/2tbsps
- Ginger garlic paste 11/2tbsps
- Coriander leaves 1 cup
- Mint leaves 1/2cup
- Turmeric powder 1/2teaspoon
- Corriander powder 1/2tbsps
- Chilli powder 1/4 tbsps
- Green chillies 4big
- Lemon juice 1/2cup
- Heat ghee in a vessel,put in the washed and drained up rice and stir it well. Now add in 5 cups of water and salt and let it cook.
- Add in the onions,gingergarlic paste,1/2of the grinded coriander & mint leaves,grounded spices,chilli powder,turmeric powder,corriander powder,salt, etc and saute it well.
- Now add in all the vegetables and let it cook with very little water.
- Take a thick bottomed vessel layer it with half the vegetable mixture over that put some cooked rice and spread it evenly.Now smear some ghee,chopped mint and corriander leaves, lemon juice and the cashew & kismis .Repeat this process again and cover it with a lid and keep it in a low flame for about 10mins.Now switch off the fire and let it set for half an hour without opening the lid.After half an hour remove the lid and stir it well so that the masala may turn upside down and smear in the fried onions.Serve it hot.
