ADA(vazhayila ada)
Ada is one of the traditional and authentic dish very famous amongst the keralites.It tastes always great with a cup of tea in the evening.This is definetly a perfect evening snack.Ada is made by wrapping the rice dough and jaggery in a banana leaf and steaming them.
Now a days people dont try making this much due to scarcity and availabily of banana leaves .But once in a while people do like to give a try with this.
The jaggery filling is the most important part here.
The rice flour has to be combined with very hot water itself ,otherwise the ada may not be that soft.This dish was something which we used to have very commonly during our school days.Once we are back from school we used to have this on the table along with a cup of tea.
Yes,,, now i am back to those wonderfull days.
Back in bangalore i do rarely come across banana leaves. So this recipe is not a common one for me at home.But once i get it will definetly give a try.
Ingredients
- Rice flour 11/2cups
- Water cup
- Salt a pinch
- Jaggery 1cup
- Coconut grated 3tbspn
- Cardamon powder 1teaspn
- Keep water to boil.
- In a vessel make a dough with rice flour,salt and hot water and keep aside
- In another bowl combine jaggery,coconut and cardamon and keep aside.
- Wash the banana leaves and show it on the gas stove on either sides so that it shrinks slightly.
- Now make small balls with the rice dough and place it on the oil smeared banana leaf and press it lightly with your fingers to make a round.Then place the jaggery mix on one side and fold the banana leaf from the other side.
- Continue this with all the leaves.
- Place this in a steamer and steam for about 5-10mins.Switch off the flame and wait for few minutes.
- Then remove it from the steamer and serve them with a glass of tea.
