Instant mango pickle
Mangoes 2nos(raw)
Mustard seeds 2tbsp
Fenugreek seeds. 1tbspn
Chilli powder 1tbsp
Salt 1tsp
Sesame oil 5tbspn
Powder 1tbsp of mustard and fenugreek seeds in a mixer.
Chop up mangoes finely. To this add in salt and keep aside.
Now keep a vessel on fire ,pour in oil and once it gets hot splutter 1tbsp mustard seeds. Now switch off the flame;then add in powdered mustard and fenugreek ,next goes in the chilli powder, stir this well. Here you have to work in quickly as it may get burnt.
Finally goes in raw mangoes. Mix all these together and let it rest in the vessel for few hours. Then transfer these to bottles and refrigerate and use as needed.
