CHICKEN SHAWARMA (simple-at home)




Pita bread:
  • All purpose flour              3cups
  • Oil                                    2tbsp
  • Yeast                                11/2tbspn 
  • Warm water                     for kneading
  • Salt                                  2teaspoon
  • Sugar.                              1/2teaspn 

To a small bowl add in yeast and 2tbsp of warm water and sugar and let it rise.
Take another large bowl and mix together maida,salt,oil and soaked yeast with sufficient quantity of warm water and knead well to a smooth dough. Keep this aside for fermentation.


Then make small balls of these; roll them gently and place on a hot iron grill and cook on either side.


For chicken:

  • Chicken                           150gms(boneless cooked and chopped thinly)
  • Turmeric powder            1/4teaspoon
  • Chilli powder                  1teaspoon
  • Ginger and garlic            finely chopped 1/2teaspoon
  • Salt                                 1/2teaspoon
  • Yogurt                            3tbsp
  • Vinegar                           1tbsp
  • Lemon juice                   1teaspn

Marinate the chicken with above ingredients and set aside for 1hr.
Then saute them in 1 teaspoon of oil lightly to get a grilled texture. Cut these grilled chicken to strips and again sauté in pan.

For veggies:

  • Carrots                           1no(thinly sliced)
  • Cabbage                        1cup.       "
  • Squash                          1/2cup.     "
  • Lemon juice                 1teaspoon
  • Salt                                1/2teaspoon
  • Vinegar.                        1teaspn 

To a bowl add in carrots,cabbage,lemon juice, squash, vinegar and salt and mix.

For sauce:
  • Mayonnaise        1cup
  • Yoghurt              3/4cup
  • Lemon juice      1teaspoon
  • Garlic                 2pods(chopped)
  • Salt                     a pinch            
Take 2garlic pods and show them on gasfire to toast and wash them in cold water and remove the black skin and chop or crush gently



Mix together all the above ingredients and get ready for plating.

Assembling:

Take a pitA bread spread some mayonnaise mix evenly. Top them with chicken ,veggies and roll them  and cover with foil/butter paper.
