COFFEE CAKE

Coffee                       11/2tbspn
Water                          1/4cup
Maida                          1cup
Baking soda                11/2teaspn
Sugar                           1cup
Vanilla essence            1teaspn
Oil                                 1/2cup
Milk                              1cup
Salt                                a pinch

  • In a vessel bring water to boil, add in instant coffee powder to the boiling water and keep it aside.
  • In another bowl mix together sugar,oil andvanilla essence and mix,now add in coffee to this and mix again.
  • Now add in maida slowly and blend it well with a spatula.
  • Add into it baking soda and salt and mix again.
  •  Add in milk lightly and stir up simultaneously making sure no lumps are formed.
  • Finally grease a microwave safe bowl and pour  the mix to it and microwave for about 9mins and turn off the microwave and leave it untouched for about 1/2 hour and revert it to a plate.
Note:
You have to use the microwave mode itself and not the convention mode
I have used nescafe coffee powder

Finally you may sprinkle some powdered sugar over it using a seive.

                                          This is again a traditional malabari snack dish,mainly made of eggs,maida,sugar and cardamon.Its taste is very familiar to the sponge cake.This is also a major ramadan dish.But the flavour of the cardamon highlights the most.I havent used much cardamon as i dont like it to be dominating.
